One of my neighbors brought this huge Chum Salmon home from fishing at the mouth of Whatcom Creek a few blocks from my house. I found the fish staring up at me from my kitchen sink. In addition to photographing his eye I also shot details of his mouth, gills, and scales. Then Natalie and I opened The Joy of Cooking to the instructions for cleaning fish and preceded to prepare this one for eating. He made a good dinner the next night, and we ate the portion we froze for weeks afterward.
